Sausage, Kale and Cheese Breakfast Casserole

Sausage, kale and Colby Jack cheese make this oh-so-delicious breakfast casserole from Happy Mothering worth getting out of bed for!


  • 1 lb nitrate-free sausage
  • 1 cup chopped organic onion
  • 4 cups chopped organic kale
  • 10 pastured eggs
  • ½ cup heavy whipping cream
  • 8 slices Crystal Farms Marble Jack Cheese
  • 1 avocado oil spray

  • Preheat oven to 350º F.
  • In a large skillet, brown sausage.
  • Add the onion and continue to cook until translucent.
  • Add the kale and cook until it has been greatly reduced.
  • Transfer the mixture to a 9-inch x 12-inch baking pan that has been sprayed with avocado oil spray.
  • In a mixing bowl, whisk the eggs and heavy whipping cream together, then pour the egg mixture over the sausage, onion and kale mixture.
  • Layer the top with slices of the Marble Jack cheese.
  • Place in the oven and cook for 25-30 minutes, or until the cheese is bubbling and starting to brown.
  • Cut into slices and serve.

Chef's Tips & Suggestions:

  1. A smaller pan can be used in place of a 9-inch x 12-inch baking pan. It may require a longer cook time.
