Preheat oven to 350 degrees. Spray a 10 x 7 inch (or similar) baking dish with cooking spray. Pour half of the jar of salsa into the bottom of the baking dish and spread evenly.
Spray tortillas with cooking spray and microwave 30 seconds to make more pliable. Place 1/3 cup of shredded cheese evenly along the middle of each tortilla followed by 1 teaspoon of minced onion. Roll up each filled tortilla and place them seam-side down into the baking dish.
Pour sauce over enchiladas to coat; sprinkle with remaining cheese and salt. Bake in preheated oven for 25 minutes or until cheese is bubbling. Serve garnished with fresh chopped cilantro if desired.
