The Italiano Grilled Cheese

An authentic grilled cheese sandwich with flavors inspired by Italy. On the table in less than 15 minutes, this is a meal that will have you saying ‘Presto!’

Ingredients

Basil Pesto Aioli

Marinated Tomatoes

  • 3 Roma tomatoes, sliced ¼-inch thick
  • 1/2 tsp balsamic vinegar
  • 1/2 tsp extra virgin olive oil
  • 1/4 tsp kosher salt
  • 1/8 tsp ground black pepper

Instructions

  • Paint ½ tablespoon of basil pesto aioli onto each side of bread.
  • Place sliced Provolone cheese on the surface of the bread.
  • Add 2 slices of tomato and shredded Mozzarella cheese on top of the Provolone cheese slice.
  • Top with another slice of Provolone cheese and finish with another slice of bread on top.
  • Griddle or bake sandwich in a 425° F oven until the bread is crispy and the cheese is melted (about 8-10 minutes).
  • Serve.

Basil Pesto Aioli

  • Process basil in a food processor until the basil is broken down and they are no longer in large pieces.
  • Add pine nuts, grated Parmesan cheese and garlic to the food processor and process until the mixture is uniform.
  • Slowly add the oil to the mixture while processing.
  • Finish by mixing with mayonnaise. Refrigerate sauce until ready to use or up to 5 days.

Marinated Tomatoes

  • Add vinegar, oil, salt and pepper with the tomatoes in a bowl.
  • Marinate for desired amount of time, up to 8 hours.
  • Serve.
