Ground Turkey Nacho Salad

Need a recipe for a Tex-Mex fix? Taco-seasoned turkey and corn are served on a bed of greens with fresh tomatoes and shredded Cheddar. Top with crushed tortilla chips for crunch!


  • 1/4 cup Ranch dressing
  • 6 tsps taco seasoning mix
  • 8 oz ground lean turkey
  • 1/2 cup frozen corn niblets; thawed
  • 2 tbsps water
  • 4 cups chopped lettuce or salad greens
  • 1 small tomato; cut into wedges
  • 1 cup nacho-flavored tortilla chips; crushed
  • 1/2 cup Crystal Farms Shredded Cheddar Cheese

  • In small bowl, stir together Ranch dressing and 1 teaspoon taco seasoning. Set aside.
  • Brown turkey in 10-inch nonstick skillet. Reduce heat to LOW; add corn. Cook 5 minutes. Stir in 5 teaspoons taco seasoning and water. Stir until sauce starts to thicken.
  • Divide salad greens equally onto two dinner plates. Top with cooked turkey mixture and tomatoes. Drizzle with salad dressing. Top with tortilla chips and cheese.
