Heat grill to medium heat. Cut a horizontal slit through the thickest part of each pork chop, forming a pocket. Mash together the blue cheese, spreadable cheese, and chives with a fork until well combined. Stuff cheese mixture into the pork chops, closing pockets with a wooden toothpick.
Season pork with garlic salt and pepper. Grill 10 to 16 minutes, turning once, until desired doneness.
