Easy Cheesy Enchiladas

Get out your tortillas and let the cheese times roll. Easy to make and quick to bake, this recipe is perfect for a busy weeknight.


  • 1 small jar (16 oz.) prepared salsa
  • 8 soft corn tortillas
  • 4 cups Crystal Farms Shredded Oaxaca
  • 1/2 medium white onion, minced
  • 1 10 oz. can prepared enchilada sauce
  • 1/2 tsp salt


  • Preheat oven to 350 degrees. Spray a 10 x 7 inch (or similar) baking dish with cooking spray. Pour half of the jar of salsa into the bottom of the baking dish and spread evenly.
  • Spray tortillas with cooking spray and microwave 30 seconds to make more pliable. Place 1/3 cup of shredded cheese evenly along the middle of each tortilla followed by 1 teaspoon of minced onion. Roll up each filled tortilla and place them seam-side down into the baking dish.
  • Pour sauce over enchiladas to coat; sprinkle with remaining cheese and salt. Bake in preheated oven for 25 minutes or until cheese is bubbling. Serve garnished with fresh chopped cilantro if desired.
