Chicken, Cheese & Potato Casserole

Diced red potatoes, cheese and roasted chicken with herbs and garlic come together to give this one-dish casserole its robust flavor.


  • 1 3/4 cups red potatoes, diced
  • 2 tbsps Dijon mustard
  • 2 tbsps extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 oz chicken breast, raw, diced
  • 2 slices bacon, cooked
  • 1/4 cup green onion, chopped
  • 1 cup Crystal Farms Shredded Cheddar Cheese

  • Preheat oven to 400° F.
  • In a medium bowl, combine potatoes, Dijon mustard, olive oil, salt and pepper. Mix well then transfer to a 9-inch x 9-inch baking pan.
  • Bake for 20 minutes, stir the potatoes and bake for an additional 15 minutes.
  • While potatoes are baking, toss chicken with ½ cup of shredded Cheddar cheese, bacon and green onions.
  • Remove pan from oven and add in the chicken, shredded Cheddar cheese, bacon and green onions. Toss the items together to equally distribute the remaining ingredients.
  • Top with remaining ½ cup shredded Cheddar cheese and continue baking for 15 minutes or until the potatoes are tender and the chicken reaches an internal temperature of 165° F.
  • Serve.
