Rinse quinoa. Add rinsed quinoa to water and add seasonings.
Cook quinoa. If you are cooking your quinoa in your pressure cooker, you will want to cook it on high pressure for 1 minute. You can also cook the quinoa on your stove.
Prepare the bruschetta. In a bowl mix chopped tomatoes, basil, balsamic vinegar, olive oil, salt, and pepper. Set aside.
Chop zucchini and cut chicken off of your rotisserie chicken.
Build your bowls. Add a few scoops of quinoa, tomato bruschetta mixture, zucchini and chicken to your bowl. Top your bowls with Crystal Farm® Shredded Mozzarella Cheese, some extra basil, and balsamic glaze.
