Chicken, Broccoli, Rice & Cheese Casserole

A classic casserole favorite featuring chicken, broccoli and rice mixed together in a Cheddar cheese sauce. A slight hint of curry helps bring a savory flavor to this already delicious one-pot dish.


  • 2 cans (21.5 oz) condensed cream of chicken soup
  • 1 cup whole milk
  • 1/4 cup Crystal Farms® Butter, unsalted
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 teaspooon curry powder
  • 3 cups brown rice, cooked
  • 16 oz chicken breast, cooked and diced
  • 16 oz frozen broccoli florets, thawed and chopped
  • 1/2 cup + 1/2 cup Crystal Farms Shredded Cheddar Cheese
  • 1/2 cup butter-flavored crackers, crushed
  • as needed nonstick cooking spray

  • Preheat oven to 400° F.
  • In a medium bowl, combine soup, milk, butter, salt, pepper and curry powder. Mix well.
  • Fold in the brown rice, cooked chicken, broccoli and half cup of shredded Cheddar cheese.
  • Transfer to a greased 4-quart casserole dish and top with the remaining cheese and crushed butter-flavored crackers.
  • Cook for about 40 minutes or whenever the internal temperature reaches 165° F.
  • Serve.
