Brown meat, drain well. In same pan, over medium heat, add spaghetti sauce and 1/2 of the Parmesan cheese. Cook until fully combined and warm. Add drained noodles, mix and cook 2-3 minutes.
Spray 9x13-inch baking dish with non-stick cooking spray. Lay 1/2 of the sauce/noodle combination in the bottom of the dish. Spread evenly. Top with 1/2 of the pepperoni slices, spread evenly. Next, sprinkle on 1/2 of the grated Mozzarella cheese. Repeat layers and top with sliced olives and 1/2 of the shredded Parmesan cheese.
Bake uncovered at 350˚ F for 30-40 minutes, until cheese is slightly golden brown.
Serve topped with additional shredded Parmesan cheese.
