BBQ Chicken Pizza

A crispy crust holds caramelized onions, cheese, grilled chicken and freshly chopped cilantro topped off with a light drizzle of BBQ sauce.


  • 1 pizza crust, refrigerated tube
  • as needed nonstick cooking spray
  • 2 chicken breast, boneless, skinless
  • 1/4 tsp kosher salt
  • 1 pinch black pepper, ground
  • 2 tsps oil
  • 3/4 cup BBQ sauce, divided
  • 3/4 cup Crystal Farms® Shredded Mozzarella Cheese
  • 1 cup Crystal Farms Shredded Gouda Cheese
  • 1/2 cup red onion, caramelized
  • to taste fresh cilantro


  • Preheat oven to 425˚ F. Spread pizza dough over a greased 8-inch x 10-inch cookie sheet. Bake for 8 minutes. Reserve.
  • Meanwhile, preheat grill. Season the chicken breast with salt and pepper, then brush with oil. Grill chicken for 5 minutes per side or until an internal temperature of 165˚ F is reached. Allow time to chill then slice into ½-inch strips. Reserve.
  • Spread ½ cup of BBQ sauce evenly over the par-baked pizza crust.
  • Top with shredded Mozzarella cheese, shredded Gouda cheese, caramelized red onions and sliced chicken breast. Bake for 10 minutes or until cheese is melted. Drizzle with remaining ¼ cup of BBQ sauce and top with fresh cilantro leaves.
